  • 1 tablespoon olive oil
  • 1/2 cup light brown sugar (plus more for topping)
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 4 tablespoons unsalted butter (plus more for topping)
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup raw pecans (chopped)

Instructions

  1. Preheat your oven to 425°F. Halve and seed the acorn squash, brush with olive oil, sprinkle with salt, and roast skin-side up for about 40–45 minutes until tender.
  2. While the squash roasts, melt butter in a small saucepan over medium heat until browned.
  3. In a medium bowl, mix together light brown sugar, flour, chopped pecans, salt, and melted butter to create the topping.
  4. Once the squash is cool enough to handle, mash the flesh and combine it with brown sugar, flour, melted butter, beaten eggs, cinnamon, vanilla extract; season to taste.
  5. Lower oven temperature to 350°F. Spread the mixture into a greased baking dish and top with the pecan mixture. Bake for 35–40 minutes until golden brown.
