  • 7 g instant yeast
  • 50 g granulated sugar
  • 1/2 tsp salt
  • 120 ml whole milk, warm
  • 60 ml water, warm
  • 60 g unsalted butter, melted
  • 2 large eggs, room temperature
  • 2 medium apples, peeled, cored, and diced small
  • 70 g brown sugar, packed
  • 2 tsp ground cinnamon
  • 60 g unsalted butter, softened
  • 125 g creamy peanut butter
  • 60 g powdered sugar, sifted
  • 4560 ml milk
  • 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together flour, yeast, sugar, and salt. In a separate bowl, whisk warm milk, warm water, melted butter, and eggs. Pour wet ingredients into dry ingredients and mix until a sticky dough forms. Knead for 8–10 minutes until smooth and elastic (add a little flour if needed).
  2. Place dough in a greased bowl. Cover it with a cloth and let it rise in a warm place for about 1 hour or until doubled in size.
  3. In another bowl, mix diced apples with brown sugar and cinnamon until well combined.
  4. Roll out the dough on a floured surface into a rectangle measuring approximately 12×18 inches (30×45 cm). Spread softened butter evenly over the surface of the dough. Sprinkle apple mixture evenly over it.
  5. Cut the dough into six strips lengthwise. Stack these strips on top of each other before cutting them into six squares. Arrange squares upright in a greased 9×5-inch (23×13 cm) loaf pan.
  6. Cover the loaf pan with a cloth and let it rise again for 30–40 minutes until puffy.
  7. Preheat your oven to 175°C (350°F). Bake for 35–40 minutes until deep golden brown. If browning too quickly, cover loosely with foil.
  8. Allow bread to cool in the pan for about 15 minutes before removing it to cool on a wire rack.
  9. Whisk together peanut butter, powdered sugar, milk, and vanilla extract until smooth and pourable.
  10. Drizzle the glaze over warm bread just before serving.
