  • 4 pieces Chicken Breasts
  • 1 cup Grated Parmesan Cheese
  • 1 teaspoon Red Pepper Flakes
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 cup Marinated Sun-Dried Tomatoes (drained)
  • 0.5 cup Fresh Basil
  • 2 cloves Garlic (minced)
  • 1 cup Cooked Couscous
  • 1 cup Mushrooms (sliced)
  • 2 cups Kale (chopped)
  • 0.5 cup Chopped Almonds (roasted salted)
  • to taste Kosher Salt
  • to taste Ground Black Pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine olive oil, Parmesan cheese, red pepper flakes, Italian seasoning, garlic powder, and paprika. Coat each chicken breast in this mixture and place them in a baking dish.
  3. In the same bowl, mix together sun-dried tomatoes, basil, minced garlic, cooked couscous, mushrooms, chopped kale, and half of the almonds. Spread evenly around the chicken.
  4. Season with salt and pepper before covering the dish with foil. Bake for 30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  5. Remove from the oven, allow to cool slightly, garnish with remaining almonds if desired, and serve warm.
