  • 2 large sweet potatoes, peeled and diced into ¾-inch cubes
  • 2 tbsp olive oil (or avocado oil)
  • 2 tbsp honey (or maple syrup)
  • ½ tsp cinnamon (optional)
  • Salt & pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the diced sweet potatoes, olive oil, honey (or maple syrup), cinnamon (if using), salt, and pepper. Toss until evenly coated.
  3. Spread the sweet potato cubes in a single layer on the prepared baking sheet.
  4. Roast for about 15 minutes, then flip the cubes for even cooking. Continue roasting for another 10–15 minutes until tender and caramelized.
  5. Let rest for 1–2 minutes before serving and garnish with fresh parsley.
