  • ⅓ cup packed light brown sugar
  • ¼ cup honey
  • 2 tablespoons freshly squeezed lime juice
  • 2 teaspoons ground chipotle powder
  • 2 teaspoons sea salt

Instructions

  1. Preheat the oven to 350°F and lightly oil a large sheet pan.
  2. In a bowl, mix cashews with vegetable oil until coated.
  3. In another bowl, whisk together brown sugar, honey, lime juice, chipotle powder, and salt.
  4. Pour the mixture over the cashews and toss until evenly coated.
  5. Spread cashews on the prepared pan and bake for about 24 minutes, stirring every 8 minutes.
  6. Once golden brown and glazed, cool completely before storing in an airtight container.
