  • 2 TBSP unsalted butter
  • 2 TBSP all-purpose flour
  • 1 cup milk (whole or 2%)
  • ¼ tsp ground cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • 5.5 ounces freshly grated medium cheddar cheese
  • 2 cups finely chopped broccoli florets

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry the russet potatoes, then pierce them several times with a fork. Drizzle with olive oil and sprinkle generously with kosher salt.
  3. Bake directly on the oven rack or on a lined baking sheet for about 50 minutes until tender.
  4. For the broccoli cheese sauce, melt butter in a medium saucepan over medium heat. Stir in flour to form a roux, then gradually whisk in milk until thickened.
  5. Add cayenne pepper, garlic powder, and salt. Remove from heat and stir in grated cheddar until melted. Fold in chopped broccoli.
  6. Slice baked potatoes open lengthwise, fluff the insides with a fork, and spoon over the creamy broccoli cheese sauce. Garnish with black pepper and chives if desired.
