  • 3 cups whole milk
  • 8 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Boil a large pot of salted water; cook tortellini according to package instructions. Reserve 1 cup pasta water, drain, and set aside.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet over medium-high heat, sauté chicken in olive oil until golden brown and cooked through. Set aside.
  4. In the same skillet, melt butter; sauté minced garlic until fragrant.
  5. Whisk in flour to create a roux; slowly add milk while stirring until thickened.
  6. Lower heat; stir in Velveeta and cream cheese until melted. Add mozzarella and Parmesan cheeses until creamy.
  7. Combine chicken and tortellini into the sauce; adjust thickness with reserved pasta water if necessary.
