- ¾ cup mini chocolate chips
- 1 quart vanilla ice cream, softened
- 1 quart chocolate ice cream, softened
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt; set aside.
- In another bowl, cream together butter, granulated sugar, brown sugar, and vanilla until light and fluffy. Beat in the egg until well combined.
- Gradually add dry ingredients to wet mixture; mix until just combined. Fold in mini chocolate chips.
- Spread batter evenly in prepared pan and bake for 20–25 minutes or until a toothpick comes out clean. Cool completely.
- Layer softened vanilla ice cream on top of the cooled cookie cake; freeze for about 30 minutes. Spread softened chocolate ice cream on top; freeze again for another 30 minutes.
- For ganache, heat heavy cream until simmering; remove from heat and stir in semi-sweet chocolate chips until melted and smooth.
- Allow ganache to cool slightly before pouring over the top layer of chocolate ice cream. Freeze for at least three hours before serving.
