Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 2 cups vanilla ice cream (or your favorite flavor), slightly softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter with granulated and brown sugars until light and fluffy. Add egg, vanilla extract, and milk; mix until smooth.
  4. Gradually incorporate the dry ingredients into the wet mixture until a soft dough forms.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly.
  6. Bake for about 8–10 minutes until set but still soft. Let cool completely on a wire rack.
  7. Once cooled, spread softened ice cream on one cookie's bottom and top with another cookie to form a sandwich.
  8. Wrap each sandwich individually in plastic wrap or foil and freeze for at least one hour before serving.
