  • 1 ¼ cups all purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter, very soft and cut into small pieces
  • 2 large eggs at room temperature
  • ½ cup full fat sour cream
  • 3 tablespoons whole milk
  • 1 teaspoon pure vanilla extract
  • 2 medium apples, peeled, cored and diced into ½ inch cubes
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 ½ tablespoon granulated sugar
  • ½ teaspoon ground cinnamon
  • ⅔ cup powdered confectioner’s sugar
  • 1 tablespoon whole milk
  • Pinch salt

Instructions

  1. Preheat oven to 350°F (177°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add soft butter and mix until crumbly.
  3. In another bowl, whisk eggs, sour cream, milk, and vanilla until smooth; then combine with dry ingredients to form a thick batter.
  4. Toss diced apples with sugar and cinnamon; fold into the batter.
  5. Spread two-thirds of the batter in the pan, layer apples on top, then dollop remaining batter over apples and sprinkle with cinnamon-sugar.
  6. Bake for 25-28 minutes until a toothpick comes out clean. Cool slightly before glazing.
  7. For the glaze, mix powdered sugar with milk and drizzle over the warm cake.
