  • 1 cup buttermilk
  • 1 large egg
  • 3 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 cup powdered sugar
  • Ground cinnamon

Instructions

  1. In a small bowl, combine 3 tablespoons melted butter, brown sugar, and cinnamon for the filling; set aside.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, egg, remaining melted butter, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter onto the skillet and swirl in about 1 tablespoon of the cinnamon filling on top.
  5. Cook until bubbles form on the surface (2-3 minutes), then flip and cook until golden brown (1-2 minutes).
  6. For the glaze, beat together softened cream cheese and butter until smooth; add powdered sugar and vanilla extract; gradually stir in milk until desired consistency is reached.
