Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsalted butter (melted) for cinnamon filling
  • 1/4 cup packed light brown sugar for cinnamon filling
  • 1 tablespoon ground cinnamon for cinnamon filling
  • 4 ounces cream cheese (softened) for cream cheese glaze
  • 1/4 cup unsalted butter (softened) for cream cheese glaze
  • 1 cup powdered sugar for cream cheese glaze
  • 1/2 teaspoon vanilla extract for cream cheese glaze
  • milk (adjust to desired consistency for cream cheese glaze)

Instructions

  1. Prepare the cinnamon filling by mixing melted butter, brown sugar, and cinnamon in a small bowl; set aside.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix buttermilk, egg, melted butter, and vanilla extract. Combine wet ingredients with dry ingredients until just mixed.
  3. Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup batter onto the skillet and swirl in about 1 tablespoon of the cinnamon filling immediately. Cook until bubbles form on the surface; flip and cook until golden brown.
  4. For the glaze, beat softened cream cheese and butter until smooth; add powdered sugar and vanilla extract. Gradually incorporate milk until reaching your desired glaze consistency.
  5. Serve pancakes stacked high with generous drizzles of cream cheese glaze.
