  • 1/4 cup Yellow Mustard
  • 2 tbsp Apple Cider Vinegar
  • 3 Hard-Boiled Eggs
  • 1/2 cup Celery
  • 1/4 cup Red Onion
  • 2 tbsp Pickle Relish or finely chopped pickles
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Paprika (plus extra for garnish)
  • 1/2 tsp Garlic Powder (optional)
  • 1 tbsp Fresh Parsley (chopped; optional for garnish)

Instructions

  1. Boil the potatoes in salted water for about 10–15 minutes until tender. Drain and set aside to cool.
  2. In a mixing bowl, whisk together mayonnaise and mustard. Add apple cider vinegar, salt, pepper, paprika, and garlic powder until smooth.
  3. Fold the cooled potatoes into the dressing along with diced eggs, celery, red onion, and pickle relish.
  4. Chill in the refrigerator for at least 30 minutes before serving.
