  • 2 tablespoons protein powder (optional)
  • 1/4 cup cashew butter (or any nut/seed butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or honey)
  • 1 1/2 cups chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. In a mixing bowl, combine non-dairy yogurt, cashew butter, vanilla extract, maple syrup, and protein powder (if using). Mix until smooth.
  2. Gently fold in chocolate chips.
  3. Line a baking sheet with parchment paper. Use a cookie scoop to dollop the mixture onto the sheet, spacing them apart.
  4. Freeze for at least 1 hour until solid.
  5. Melt chocolate chips and coconut oil together in a microwave-safe bowl or double boiler.
  6. Dip each frozen bite into the melted chocolate until fully coated and return to the baking sheet.
  7. Freeze again for an additional 30 minutes until the chocolate hardens.
