  • 2 tablespoons protein powder (optional)
  • 1/4 cup cashew butter (or any nut/seed butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or honey)
  • 1 1/2 cups chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. In a mixing bowl, combine non-dairy yogurt, protein powder, nut butter, vanilla extract, and maple syrup. Mix until smooth.
  2. Stir in mini chocolate chips.
  3. Line a baking sheet with parchment paper and scoop dollops of the mixture onto it, spacing them apart.
  4. Freeze for at least 1 hour or until solid.
  5. Melt chocolate chips and coconut oil together until smooth.
  6. Dip each frozen bite into the melted chocolate to coat thoroughly and return to the baking sheet.
  7. Freeze again for another 30 minutes or until the chocolate hardens.
