  • ½ cup brown sugar, packed

  • 1 ½ cups finely grated carrots
  • ½ cup crushed pineapple, drained (optional)
  • 8 oz cream cheese, softened
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In a larger bowl, mix oil, sugars, eggs, and vanilla until smooth. Fold in dry ingredients and then stir in grated carrots.
  4. In another bowl, beat cream cheese with sugar and egg until creamy.
  5. Pour half the carrot batter into the pan. Drop spoonfuls of cream cheese mixture on top, followed by the remaining carrot batter. Swirl gently with a knife.
  6. Bake for 35–40 minutes or until a toothpick comes out clean. Let cool completely before slicing.
