  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs. fresh tomatoes (roma, plum, or vine-ripened)
  • 1/2 cup fresh basil leaves or 2 teaspoons dried basil
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Vegan cream for serving

Instructions

  1. Prep the vegetables by slicing the onion and mincing the garlic. Cut the tomatoes into quarters.
  2. In a heavy-bottomed pan, heat olive oil or water over medium heat. Sauté the onion for about 7 minutes until translucent, then add garlic and cook for an additional minute.
  3. Add chopped tomatoes, basil leaves, oregano, salt, pepper, and vegetable broth to the pan. Stir well.
  4. Bring to a boil, cover, and reduce heat to low; let simmer for about 15 minutes.
  5. Allow cooling slightly before blending with an immersion blender until desired consistency is reached. Adjust seasoning as needed.
  6. Serve warm with vegan cream drizzled on top and garnished with fresh basil.
