  • 1 cup brown lentils (rinsed)
  • 2 medium carrots (diced)
  • 2 celery stalks (diced)
  • 1 medium sweet potato (peeled and cubed)
  • 1 zucchini (diced)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 1 small butternut squash (peeled and cubed)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 can (14 oz diced tomatoes)
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • ½ tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 2 tbsp olive oil
  • 2 cups chopped kale or spinach
  • Fresh parsley (chopped)
  • A drizzle of olive oil or a squeeze of lemon

Instructions

  1. Rinse the brown lentils under cold water.
  2. Chop all vegetables into uniform pieces for even cooking.
  3. Place lentils, carrots, celery, sweet potato, zucchini, bell peppers, butternut squash, onion, garlic, diced tomatoes, vegetable broth, smoked paprika, ground cumin, cinnamon, black pepper, salt, and olive oil into the slow cooker.
  4. Cook on low heat for 6 hours or high for 3 hours.
  5. Stir in chopped kale or spinach 15 minutes before serving and adjust seasoning as needed.
  6. Serve hot with fresh parsley and a drizzle of olive oil or lemon juice.
