  • 4 lbs roast beef
  • 5 dried guajillo chiles
  • 2 dried ancho chiles
  • 2 garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ¼ cinnamon stick
  • 1 tablespoon beef bouillon
  • Salt and pepper to taste
  • 34 cups water
  • 2 tablespoons oil

Instructions

  1. Toast guajillo and ancho chiles on a griddle over medium heat for 2-3 minutes until fragrant.
  2. Soak toasted chiles in hot water for 5 minutes until pliable.
  3. In a blender, combine soaked chiles, garlic, oregano, thyme, cinnamon stick, bouillon, salt, pepper, and reserved soaking water; blend until smooth.
  4. Sear seasoned roast beef in oil over medium-high heat until browned on all sides.
  5. Place seared beef in slow cooker; pour blended chile mixture over it, adding enough water to cover meat.
  6. Cook on low for 6-8 hours until beef is tender and shreds easily.
