  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1/2 cup granulated sugar for filling
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. In a bowl, mix the dry ingredients: cake flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and sugars until fluffy. Add eggs one at a time, then mix in sour cream and milk.
  4. Gradually combine dry ingredients with wet until just mixed.
  5. Divide batter among prepared pans and bake for about 25 minutes or until a toothpick comes out clean. Let cool.
  6. Prepare the strawberry filling by cooking frozen strawberries with water and lemon juice until soft; thicken with cornstarch slurry and cool completely.
  7. For the frosting, beat softened butter until creamy; gradually add powdered sugar and reserved strawberry filling until smooth.
  8. Assemble the cake by layering chocolate cakes with strawberry filling and frost with strawberry buttercream.
