  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)
  • Optional toppings: shredded cheddar, cilantro, sour cream, corn chips/strips, scallions or red onions, avocado

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat; sauté chopped onion until translucent (about 5 minutes).
  2. Add ground turkey, cooking until browned, breaking it apart as it cooks (around 5 minutes).
  3. Stir in tomato paste and spices—chili powder, garlic powder, cumin, smoked paprika—and mix well.
  4. Add drained beans, diced tomatoes (with juices), and chicken broth; bring to a gentle boil.
  5. Reduce heat and simmer for 15–20 minutes, stirring occasionally.
  6. Season with salt and pepper to taste; serve hot with your favorite toppings.
