  • 500g chicken breast, cubed
  • 200g mushrooms, sliced
  • 1 red bell pepper, sliced
  • 300g fresh asparagus
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame oil or vegetable oil
  • Salt & black pepper to taste
  • Chopped green onions for garnish
  • 200g jasmine or long-grain rice
  • 400ml water
  • Pinch of salt
  • 1 tbsp olive oil

Instructions

  1. Cook rice in salted water for 15-20 minutes until fluffy.
  2. Roast asparagus in olive oil over medium heat for about 8-10 minutes until tender-crisp.
  3. In a wok, heat sesame oil and sauté minced garlic until fragrant (30 seconds). Add chicken and cook until golden brown (5-7 minutes).
  4. Mix in mushrooms and bell pepper; cook an additional 3-4 minutes.
  5. Stir in soy sauce, hoisin sauce, and cornstarch slurry; cook until thickened (2-3 minutes).
  6. Serve hot with the cooked rice and roasted asparagus.
