  • 20 large white mushrooms
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 10 black olives, sliced into rounds (for eyeballs)
  • 1 roasted red pepper strip (for pupils)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms and remove stems; finely chop the stems.
  3. In a skillet over medium heat, sauté chopped mushroom stems and minced garlic in olive oil for about 3–4 minutes until softened.
  4. In a mixing bowl, combine the sautéed mixture with cream cheese, Parmesan cheese, breadcrumbs, parsley, oregano, salt, and pepper.
  5. Generously fill each mushroom cap with the prepared mixture and place them on the lined baking sheet.
  6. Bake for 18–20 minutes or until mushrooms are tender and filling is golden brown.
  7. Once baked, top each mushroom with an olive slice as an 'eyeball' and add a strip of roasted red pepper as a pupil.
