  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the gingerbread cookie crumbs, melted butter, and brown sugar. Mix until well combined and press this mixture firmly into the bottom of a greased 9×9-inch baking pan to form an even crust.
  3. In another mixing bowl, beat together softened cream cheese and granulated sugar until smooth using an electric mixer. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, cinnamon, ginger, nutmeg, and cloves until fully incorporated.
  4. Pour the cheesecake filling over the prepared crust in the baking pan and spread it evenly using a spatula.
