  • 1 ½ cups gingerbread cookie crumbs
  • ¼ cup unsalted butter (melted)
  • 2 tablespoons brown sugar
  • 16 oz cream cheese (softened)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix gingerbread cookie crumbs, melted butter, and brown sugar. Press into the bottom of the pan.
  3. Bake for 10 minutes until set.
  4. Beat softened cream cheese in another bowl until smooth. Gradually add sugar and mix well.
  5. Add eggs one at a time followed by vanilla and spices; mix until combined.
  6. Pour filling over crust and bake for an additional 30 minutes until slightly jiggly.
  7. Cool at room temperature before refrigerating for at least three hours.
  8. Cut into squares and serve with optional toppings.
