  • 2 whole mackerel (cleaned and scaled)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili flakes (optional)
  • 1 lemon (sliced)
  • Fresh rosemary or thyme

Instructions

  1. Rinse the cleaned mackerel under cold water and pat dry with paper towels. Score the skin with shallow cuts.
  2. In a bowl, mix olive oil, garlic, paprika, salt, black pepper, and optional chili flakes. Rub the marinade over the fish.
  3. Stuff each fish with lemon slices and sprigs of rosemary or thyme.
  4. Preheat your grill to medium-high heat and lightly oil the grates. Grill the mackerel for about 4–5 minutes on each side until the skin is crispy.
