  • 110g Medjool dates
  • 160ml milk of choice
  • 2 tbsp tahini
  • 2 tbsp coconut oil
  • 1 tbsp date syrup
  • 75g oat flour
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • pinch of salt
  • 3 tbsp tahini (for drizzle)
  • 1 tsp date syrup (for drizzle)

Instructions

  1. Preheat your oven to 180C/160C fan.
  2. In a saucepan, simmer the Medjool dates and milk over low heat for about 5 minutes. Mash until smooth.
  3. Stir in tahini, coconut oil, and date syrup until well mixed.
  4. In a large bowl, combine oat flour, cinnamon, baking powder, and salt. Fold in the date mixture to create a batter.
  5. Divide the batter among four lightly oiled mini basins and bake for 20-25 minutes until a skewer comes out clean.
  6. For the drizzle, mix tahini with date syrup and a pinch of salt. Pour over warm puddings before serving.
