Homemade Roasted Tomato Basil Soup is a comforting and flavorful dish that brings the vibrant taste of fresh tomatoes and aromatic basil directly to your table. This easy-to-make soup features roasted tomatoes and garlic, which enhance the natural sweetness and create a rich, satisfying flavor.

  • 3 pounds roma or plum tomatoes, cut in half
  • 8 cloves garlic, peeled
  • 3 tablespoons olive oil
  • 2 yellow onions, thinly sliced
  • ½ cup packed basil leaves
  • ½ teaspoon dried oregano
  • 12 cups water or vegetarian broth, depending on how thick you want the soup
  • Freshly ground salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Place halved tomatoes and garlic on the baking sheet. Drizzle with olive oil, then season with salt and pepper. Roast for 40-45 minutes until tender.
  3. In a large pot, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 20 minutes.
  4. Allow roasted tomatoes and garlic to cool slightly before blending them with basil and caramelized onions until smooth.
  5. Return the mixture to the pot over medium-low heat, adding oregano and water or broth for desired thickness. Season to taste.
  6. Simmer for about 10 minutes before serving.
