  • 1 tbsp olive oil
  • 2 tbsp honey
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 ripe avocado, diced
  • 1 head romaine or butter lettuce, leaves separated
  • 1 cup canned black beans, rinsed
  • 1 cup corn (canned, fresh, or thawed if frozen)
  • 2 tbsp chopped cilantro
  • ½ cup Greek yogurt
  • 1 tbsp lime juice

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped chicken and season with honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper.
  3. Cook until browned and fully cooked (about 8-10 minutes). Set aside.
  4. In a bowl, mix Greek yogurt with lime juice until smooth; chill until ready.
  5. Assemble by laying out lettuce leaves and filling each with chicken mixture topped with avocado, black beans, corn, and cilantro.
  6. Drizzle sauce over each cup just before serving.
