  • 1 tsp salt
  • 1 tbsp olive oil
  • 3/4 cup warm water
  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 egg (for egg wash)
  • Fresh parsley for garnish

Instructions

  1. Prepare the Dough: In a bowl, mix flour and salt. Gradually add olive oil and warm water until a dough forms. Knead for 5 minutes, then let rest for 30 minutes.
  2. Marinate Chicken: Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Add chicken; marinate for at least 30 minutes.
  3. Cook Chicken: Grill or pan-sear chicken over medium heat until fully cooked (5–6 minutes per side). Slice into strips.
  4. Assemble Calzones: Preheat oven to 400°F (200°C). Roll out dough into circles. Place chicken strips, tomatoes, olives, and feta in the center of each circle. Fold and seal edges.
  5. Bake Calzones: Place on a parchment-lined baking sheet, brush with beaten egg for shine, carve faces if desired. Bake for 20–25 minutes until golden brown.
  6. Serve warm garnished with fresh parsley.
