  • 100 g Cold Butter
  • 60 g Powdered Sugar
  • ½ lemon Lemon Zest
  • ½ teaspoon Vanilla
  • 3 Egg Yolks
  • 200 g All-Purpose Flour
  • 5 Egg Whites
  • 300 g Granulated Sugar
  • 100 g Water
  • Lemon Lavender Curd
  • Dried lavender flowers (for the lemon lavender curd)

Instructions

  1. For the crust, mix cold butter and powdered sugar until smooth. Add lemon zest, vanilla, and egg yolks; then incorporate all-purpose flour until just combined. Press into tart pans and chill.
  2. To make the lemon lavender curd, whisk lemon juice, zest, sugar, egg yolks, and vegetable broth in a saucepan over medium heat until thickened. Stir in dried lavender flowers and strain into cooled tart crusts.
  3. For the meringue, whip egg whites until soft peaks form. Boil granulated sugar with water until it reaches 115°C. Slowly pour hot syrup into whipped egg whites while whisking until glossy.
  4. Pipe meringue over tarts and lightly brown if desired.
