  • 1 lb shrimp (peeled and deveined)
  • 2 ripe avocados (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (chopped)
  • 1/4 red onion (thinly sliced)
  • 1/3 cup kalamata olives (sliced, optional)
  • 1/4 cup fresh parsley or dill (chopped)
  • 3 tbsp olive oil (extra virgin)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. Prepare all ingredients: peel and devein shrimp; dice avocados; halve tomatoes; chop cucumber; slice onion and olives.
  2. Cook shrimp in a skillet with olive oil over medium heat for 3–5 minutes until pink and opaque. Season with salt and pepper.
  3. For the dressing, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  4. In a large mixing bowl, combine cooked shrimp with avocados, tomatoes, cucumber, onion, olives (if using), feta cheese, and fresh herbs. Drizzle dressing over the salad and gently toss.
