Nicoise Salad is a vibrant, flavorful dish that beautifully combines fresh vegetables, protein-rich tuna, and a zesty dressing, making it ideal for a wholesome meal or light lunch.

  • 1 pound small potatoes
  • 2 cups green beans
  • 4 hard-boiled eggs
  • 4 heads Little Gem lettuce
  • 3 medium cherry tomatoes, quartered
  • 2 cans canned tuna in oil
  • 6 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons white apple vinegar
  • ½ clove garlic

Instructions

  1. Boil water in a pot with salt and cook the small potatoes until tender, about 10–15 minutes. In another pot, boil green beans for 5 minutes until bright green. Drain both and set aside.
  2. For hard-boiled eggs, place them in cold water, bring to a boil, cover, and let sit off heat for 9–12 minutes before cooling in cold water.
  3. In a mixing bowl, whisk together garlic, olive oil (from tuna cans or regular), Dijon mustard, and white apple vinegar.
  4. Chop boiled potatoes into bite-sized pieces and combine with green beans in a serving bowl. Halve the hard-boiled eggs and add alongside Little Gem lettuce leaves and quartered tomatoes.
  5. Drizzle the dressing over the salad and season with salt to taste.
