  • 1 can (28 oz / 800 g) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil (or 1 tablespoon fresh, chopped)
  • 1 teaspoon sugar (to balance acidity)
  • 4 cups vegetable broth (or chicken broth)
  • 12 oz (340 g) pasta (penne, rigatoni, or spaghetti)
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • ½ cup Parmesan cheese, freshly grated
  • Salt and black pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion until softened (about 3–4 minutes). Add minced garlic and red pepper flakes; cook for 1 minute.
  2. Stir in crushed tomatoes, oregano, basil, sugar, and broth. Mix well.
  3. Add uncooked pasta to the pot, ensuring it's immersed in the sauce. Bring to a boil, then reduce heat to medium-low. Simmer uncovered for 12–15 minutes until pasta is al dente.
  4. Lower the heat and mix in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  5. Serve warm, garnished with fresh basil or parsley.
