  • 3 ripe peaches (sliced into wedges)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (thinly sliced)
  • 1/4 red onion (thinly sliced)
  • 1/2 cup fresh basil leaves (torn)
  • Optional: 1/2 cup fresh mozzarella balls or turkey slices
  • Dressing: extra virgin olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and toast cubed bread on a baking sheet for 10-15 minutes until golden brown.
  2. In a large mixing bowl, combine sliced peaches, cherry tomatoes, cucumber, red onion, and torn basil. Add mozzarella or turkey if desired.
