  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. In another bowl, mix granulated sugar, brown sugar, and vegetable oil until combined. Add pumpkin puree, eggs, and vanilla; mix until smooth.
  4. Gradually add dry ingredients to the wet mixture using a rubber spatula until just combined.
  5. Fold in chocolate chips until evenly distributed.
  6. Fill each cupcake liner 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow cooling in the tin for 5 minutes before transferring to a cooling rack.
