- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 1 cup canned pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
- In another bowl, mix granulated sugar, brown sugar, and vegetable oil until combined. Add pumpkin puree, eggs, and vanilla; mix until smooth.
- Gradually add dry ingredients to the wet mixture using a rubber spatula until just combined.
- Fold in chocolate chips until evenly distributed.
- Fill each cupcake liner 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow cooling in the tin for 5 minutes before transferring to a cooling rack.
