Raspberry Tiramisu is a refreshing and delightful twist on the classic Italian dessert.   • 1 1/2 cups fresh raspberries (plus more for garnish)
  • 1/2 cup raspberry jam or preserves
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 7 ounces ladyfinger cookies
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine raspberry jam, water, and lemon juice over medium heat until smooth. Let cool slightly.
  2. Lightly dip each ladyfinger in the raspberry mixture and arrange them in the bottom of an 8×8-inch dish.
  3. In a mixing bowl, beat the mascarpone cheese until smooth. In another bowl, whip cold heavy cream with powdered sugar and vanilla until stiff peaks form. Gently fold whipped cream into mascarpone.
  4. Spread half of the mascarpone mixture over the layer of ladyfingers, then add half of the fresh raspberries on top.
  5. Repeat with another layer of dipped ladyfingers followed by remaining mascarpone mixture and fresh raspberries.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight before serving.
  7. Garnish with extra raspberries just before serving.
