  • 2 tablespoons unsalted butter (or olive oil)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice (basmati or jasmine), rinsed and drained
  • 2 cups chicken or vegetable broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme (or 1 teaspoon fresh)
  • 1 bay leaf
  • ¼ cup slivered almonds or pine nuts, toasted (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the aromatics: In a medium saucepan, melt the butter over medium heat. Add the onion and cook until soft and translucent (3–4 minutes). Stir in the garlic and cook for another minute.
  2. Toast the rice: Add the rinsed rice to the pan and cook while stirring for about 2–3 minutes until lightly golden.
  3. Simmer: Pour in the broth along with salt, pepper, thyme, and bay leaf. Bring to a boil then reduce heat to low. Cover and simmer for 15–18 minutes until rice is tender and liquid is absorbed.
  4. Rest & fluff: Remove from heat and let sit covered for 5 minutes. Discard bay leaf before fluffing rice with a fork.
  5. Serve: Optionally stir in toasted nuts for added crunch and garnish with fresh parsley.
