4 medium sweet potatoes, peeled and diced
4 slices Turkey Bacon, chopped
1/4 cup unsalted butter
1/4 cup brown sugar, packed
2 tablespoons maple syrup
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup pecans, chopped
Salt, to taste
Freshly ground black pepper, to taste
Instructions
In a large skillet over medium heat, cook chopped turkey bacon until crisp. Use a slotted spoon to remove it while reserving 1 tablespoon of fat in the skillet.
Melt unsalted butter in the reserved fat, then add brown sugar, maple syrup, cinnamon, nutmeg, salt, and pepper. Stir until dissolved and simmer for 1-2 minutes.
Add diced sweet potatoes to the skillet, toss to coat in glaze, cover, and cook on medium-low for 20-25 minutes until tender.
Stir in crispy turkey bacon and pecans; warm through for 2-3 minutes before serving.
