  • 4 medium sweet potatoes, peeled and diced
  • 4 slices Turkey Bacon, chopped
  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar, packed
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup pecans, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a large skillet over medium heat, cook chopped turkey bacon until crisp. Use a slotted spoon to remove it while reserving 1 tablespoon of fat in the skillet.
  2. Melt unsalted butter in the reserved fat, then add brown sugar, maple syrup, cinnamon, nutmeg, salt, and pepper. Stir until dissolved and simmer for 1-2 minutes.
  3. Add diced sweet potatoes to the skillet, toss to coat in glaze, cover, and cook on medium-low for 20-25 minutes until tender.
  4. Stir in crispy turkey bacon and pecans; warm through for 2-3 minutes before serving.
