  • 1 1/2 pounds medium carrots, peeled
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil or steam the carrots for 10–12 minutes until just tender. Drain well.
  3. Place the carrots on the prepared baking sheet and gently press down with the bottom of a glass until slightly flattened.
  4. Drizzle with olive oil and honey (or maple syrup). Season with garlic powder, smoked paprika, salt, and pepper before roasting for 20–25 minutes until golden brown.
  5. Garnish with fresh parsley before serving warm.
