  • 1 1/2 pounds medium carrots, peeled
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil or steam the medium carrots for 10–12 minutes until just tender. Drain and let cool slightly.
  3. Arrange the cooked carrots on the baking sheet. Using the bottom of a glass or measuring cup, gently press each carrot until slightly flattened.
  4. Drizzle the smashed carrots with olive oil and honey (or maple syrup), then sprinkle with garlic powder, smoked paprika, salt, and black pepper.
  5. Roast for 20–25 minutes, flipping halfway through until golden brown and caramelized.
  6. Garnish with freshly chopped parsley before serving warm.
