  • 2 tsp garlic powder
  • 2 tsp paprika
  • 2 tbsp olive oil
  • 2 cups wood chips (hickory or applewood)

Instructions

  1. Prepare the Brine: Mix water, salt, sugar, and garlic powder in a large container until dissolved. Submerge the turkey breast in the brine and refrigerate for at least 12 hours.
  2. Rinse and Dry: Remove the turkey from the brine, rinse under cold water, and pat dry thoroughly with paper towels.
  3. Season: Rub olive oil over the turkey breast and sprinkle paprika evenly across its surface.
  4. Smoke: Preheat your smoker to 225°F (107°C). Soak wood chips for about 30 minutes before placing them in the smoker. Place turkey on the rack and smoke for 3-4 hours or until it reaches an internal temperature of 165°F (74°C).
  5. Rest: Let the smoked turkey rest for about 20 minutes before slicing.
