  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 115 grams unsalted butter, softened
  • 100 grams granulated sugar
  • 110 grams packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 120 grams canned pumpkin puree
  • Additional granulated sugar

Instructions

  1. Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices until combined.
  3. In a large bowl, cream softened butter with granulated and brown sugars until fluffy.
  4. Add the egg and vanilla extract to the creamed mixture; beat until well blended.
  5. Mix in the pumpkin puree until smooth.
  6. Gradually incorporate the dry ingredients into the wet mixture; stir just until combined.
  7. Scoop tablespoon-sized portions of dough, roll into balls, then coat in additional granulated sugar.
  8. Place on the prepared baking sheet about 5 cm apart and bake for 10–12 minutes until edges are set but centers are still soft.
  9. Allow cookies to cool on the tray for 5 minutes before transferring to a wire rack.
