  • 1 lb (450g) ground beef (or turkey/chicken/plant-based alternative)
  • 2 medium sweet potatoes, peeled and diced (½-inch cubes)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Salt & pepper, to taste
  • ½ cup black beans, drained and rinsed
  • ½ cup corn (fresh, canned, or frozen)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes in an even layer; cook for 8–10 minutes until lightly browned.
  3. Push sweet potatoes aside and sauté chopped onion and minced garlic for about 2 minutes.
  4. Add ground beef (or alternative) to the skillet and cook, crumbling until browned (5–7 minutes). Drain excess grease if desired.
  5. Stir in chili powder, cumin, smoked paprika, salt, and pepper; mix well.
  6. Add black beans and corn; cook for an additional 5 minutes until heated through.
