  • 1 cup brown sugar
  • 2 large eggs
  • ½ cup sour cream
  • 2 cups diced ripe pears

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat the softened butter and brown sugar until fluffy. Add eggs one at a time and mix well. Stir in sour cream until combined.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Carefully add diced pears and fold gently.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack to cool completely.
