  • Extra sugar for rolling
  • White chocolate or candy melts
  • Mini chocolate chips or edible markers

Instructions

  1. In a saucepan over medium heat, brown the unsalted butter until golden and nutty. Allow it to cool slightly in a mixing bowl.
  2. Whisk in pumpkin purée, maple syrup, both sugars, vanilla extract, and egg yolk until smooth.
  3. In another bowl, combine flour, baking soda, salt, cinnamon, and pumpkin pie spice.
  4. Mix dry ingredients into the wet mixture until forming a soft dough.
  5. Scoop dough into 1.5-tablespoon balls and roll in extra sugar before placing on a parchment-lined baking sheet.
  6. Preheat the oven to 350°F (175°C) and bake for about 12 minutes until edges are set but centers remain soft.
