  • 16 large white or cremini mushrooms
  • 8 oz cream cheese (softened)
  • 1/2 cup cooked turkey sausage or crumbled turkey bacon
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic (minced)
  • 1 tablespoon fresh parsley (chopped)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 16 small olives (pitted, for 'pupils')
  • Cooking spray or olive oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms with a damp cloth and remove the stems. Finely chop the stems.
  3. In a mixing bowl, combine chopped stems, cream cheese, turkey sausage, Parmesan cheese, garlic, parsley, salt, and pepper. Mix well.
  4. Fill each mushroom cap with the mixture and press down gently.
  5. Place stuffed caps on a greased baking sheet and press an olive into each one.
  6. Bake for 20-25 minutes until golden and bubbly.
  7. Allow to cool slightly before serving.
