  • 2 ½ tablespoons granulated sugar
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • ½ cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. In a medium saucepan, bring water, 2 ½ tablespoons sugar, salt, and butter to a boil. Stir in flour until a smooth ball forms; remove from heat and cool for 5 minutes.
  2. Beat in eggs one at a time until dough is smooth and sticky. Mix in vanilla extract.
  3. Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
  4. Transfer dough to a piping bag with a star tip. Pipe 1-inch pieces into the hot oil, cutting with scissors as you go. Fry until golden brown (about 2 minutes per side) using a slotted spoon to remove and drain on paper towels.
  5. Roll warm churro bites in a mix of cinnamon and remaining sugar before serving.
