  • 190 grams chocolate cookie crumbs
  • 60 milliliters unsalted butter, melted
  • 680 grams cream cheese, softened
  • 200 grams granulated sugar
  • 25 grams unsweetened cocoa powder
  • Red gel food coloring (as needed)
  • 3 large eggs
  • 5 milliliters vanilla extract
  • 120 milliliters dark chocolate sauce

Instructions

  1. Preheat the oven to 160°C (320°F) and grease a 23-centimeter springform pan.
  2. In a mixing bowl, combine chocolate cookie crumbs with melted butter, then press into the bottom of the springform pan.
  3. Using a stand mixer, beat together cream cheese, sugar, cocoa powder, and red gel food coloring until smooth. Add eggs one by one and mix until fully incorporated.
  4. Pour the filling over the crust and smooth the surface with a spatula. Bake for 50–55 minutes or until edges are set and center is slightly wobbly.
  5. Let cool at room temperature for an hour before transferring to the refrigerator to chill for at least 4 hours.
  6. Drizzle with dark chocolate sauce before serving.
