Instructions

  1. Cube the watermelon and weigh to ensure you have 6 cups. Optionally macerate with lime juice and salt for enhanced flavor.
  2. Blend the watermelon until smooth and strain through a fine mesh sieve into a mixing bowl.
  3. In a saucepan, heat sugar with water until it reaches 230°F to create a syrup. Stir in lime juice and salt; allow to cool.
  4. Mix the chilled watermelon purée with the cooled sugar syrup; add any optional ingredients if desired.
  5. Chill the mixture until it reaches 40°F, then churn in an ice cream maker until smooth. Transfer to an airtight container and freeze for at least 2 hours before serving.
